Ingredients

1 cup Packed light brown sugar
1 cup Granulated sugar
1 cup Room-temperature unsalted butter
1/2 cup Heinz® Tomato Ketchup
2 Large whole eggs
1 teaspoon Vanilla extract
2 cups All-purpose flour
1 teaspoon Baking soda
1 teaspoon Baking powder
1 teaspoon Ground cinnamon
1/2 teaspoon Ground nutmeg
1/2 teaspoon Ground ginger
1/4 teaspoon Ground allspice
1/4 teaspoon Salt
2 cups Old-fashioned rolled oats
1-1/2 cups Finely shredded carrots
1 cup Raisins
1 cup Chopped walnuts
--- Frosting Ingredients ---
8 ounces Room-temperature cream cheese
1/2 cup Room-temperature unsalted butter
2-1/4 cups Confectioners' sugar
1 teaspoon Vanilla extract

Cookie Preparation

  1. In the large bowl of an electric mixer, combine brown sugar, granulated sugar, butter, and Ketchup. Beat at medium speed until light and fluffy.
  2. Add eggs and vanilla and continue beating on medium speed until mixture is well blended.
  3. In another bowl, sift together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, allspice, and salt.
  4. Gradually add flour mixture to the Ketchup mixture, mixing on low speed until combined.
  5. Stir in oats, carrots, raisins, and nuts.
  6. Chill dough in refrigerator for at least 2 hours or overnight.
  7. Using a #40 scoop (approximately 1-1/2 tablespoons), scoop dough onto prepared baking sheets, leaving 2 inches between cookies.
  8. In a preheated 350 F oven, bake cookies for 15 to 18 minutes, until they are brown around the edges.
  9. Transfer to a wire rack to cool.
  10. Cookies can be served "as is" or assembled into cookie sandwiches. To assemble cookie sandwiches, spread the underside of one cookie with about 2 teaspoons of Cream Cheese Frosting (see recipe below). Top with a plain cookie, placing flat sides together. Repeat with remaining cookies.

Frosting Preparation

  1. Place cream cheese and butter in a mixing bowl. Using an electric mixer, beat until smooth and well blended.
  2. Sift in confectioners' sugar and continue beating until smooth.
  3. Add vanilla and stir to combine.
