Fried Rice and Rainbow Peppers

Ingredients

1/2 cup Heinz® Tomato Ketchup
1/4 cup tomato juice
2 Tbsp. soy sauce
2 Tbsp. lime juice
1 Tbsp. minced fresh ginger
1 Tbsp. sesame oil
2 cloves garlic minced
2 Tbsp. vegetable oil
1 cup finely chopped onion
1 cup finely chopped red pepper
1 cup finely chopped yellow pepper
1 cup finely choppped green pepper
3 cups cooked rice
2 thinly sliced green onions
sesame seeds (optional)

Preparation

  1. Blend the Ketchup with the tomato juice, soy sauce, lime juice, ginger, sesame oil, and garlic. Reserve.
  2. Heat vegetable oil in a skillet or wok set over medium-high heat.
  3. Add the onion and peppers and stir-fry for 5 minutes, until vegetables are browned.
  4. Add the rice and stir-fry for 2 minutes.
  5. Pour in the Ketchup mixture and stir-fry for 5 minutes or until most of the moisture is evaporated from the pan.
  6. Sprinkle with green onions and sesame seeds (if using).
